ON THE SOAPBOX - YOU DO NOT NEED A CLASS TO USE A KNIFE

It's just the soapbox again - this time, I am just saying that you don't need a knife skills class to use your own knife in your own kitchen.

Do whatever you like - if taking a class in something is interesting to you

and you like it

I love it.

But - it isn't necessary to learn techniques for speed or "best practices" unless you intend to work in a commercial kitchen.

Ya feel me?

Why does the speed of cutting up an onion matter if you're just cutting 'em up for you?

Newsflash: It doesn't...it's another example of the difference between what commercial chefs and restaurateurs teach, which are commercial kitchen skills, and the skills you develop and use to master the art and science of cooking at home.
