something that those light-colored interiors just CAN NOT DO

🧅the underside of the lid has drip points - tiny spikes that help keep foods moist and flavorful while cooking

That black interior is hands-down the game-changer - with no browning, there's no fond (those browny bits in the bottom of the pot); and that fond is the essence of the dish - it makes the gravy.

Prices for enameled are not cheap, so if you're spending the money, get the benefit that Staub offers for the same price as Le Creuset.
